Maca
Lepidium Peruvianum
One
to three teaspoons in juice, coffee, tea, infusions, milk, soups, puddings,
desserts, and any kind of dish. Kids, half the dose. The dose may increase,
without counter indications.
For
6 portions:
Blend
and liquefy the following ingredients:
Three
teaspoons of Maca, 2 eggs, 3 cups of milk, 5
teaspoons of sugar, vanilla essence.
For
6 portions:
Blend
and liquefy the following ingredients:
Two
teaspoons of Maca, 5 oz. of pisco* or rum or vodka
or other liquor, one egg, 1½ cup of milk, 4 teaspoons of sugar and 4 ice cubes.
*Peruvian
grape really fine brandy. You should try it. Chileans make a low quality brandy
unduly called pisco. You should no confuse them. Process of production and kind
of grapes used are totally different
For
6 portions:
Liquefy
together the following ingredients:
2
cups of fruit (banana or apple or quince or another fruit), 4 teaspoons of Maca, 1 tablespoon of honey, 2
teaspoons of extract of carob tree sheath, ½ lemon juice, 2 eggs, 2½ cups of
milk, 3½ tablespoons of sugar, vanilla essence, 8 ice cubes.
Each
portion: Blend a cup of cooked oat flakes with some fruit or cocoa, with one
teaspoon of Maca, sugar to the taste.
For
12 individual mini cakes:
125g.
of plain wheat flour, one egg (separate the egg yolk), 1/5 cup of vegetal oil,
¼ teaspoon of salt, 3 tablespoons of sugar, 30 raisins cut by the middle, 2
teaspoons of baking powder, one teaspoons of vanilla essence, 1/3 cup of water,
(12 greased paper molds No. 6). Beat the white of the egg with the sugar until
it looks like snow. Sift the flour with Maca, baking powder and salt. In the
bowl with the white of the egg beaten, incorporate part by part the dry
ingredients, the vanilla, and the water. Once they are mixed up, add the oil,
until it incorporates totally. Mix the raisins with a small amount of flour, and
add them to the mix, and mix until they are uniformly distributed. Put the
greased paper molds in aluminum small molds, and pour the mix. Take them to the
oven with medium temperature for about 40 to 45 minutes.
You can replace the raisins with and equivalent quantity of pineapple in small bits, strawberry jam, orange jam, etc.
For
16 portions:

pieces of bread (approx. 400g.), 80g. Maca
flour, one egg, 120g. brown
sugar, 100g. raisins, ½ can of evaporated milk, ¼ cup of vanilla essence.
Soak
the bread in water until they become softened, drain and put them in a bowl,
crumble them and add milk, let the mix rest for 5 minutes, add the egg, sugar,
raisins and vanilla essence, mix well.
Pour
the mix in a 36x25cm.(approx.) mold
with 225g. of melted sugar, and put it in double boiler in the oven at 175ºF
for 45 minutes. Let it cool off in the mold and then take it out.
For
12 hamburgers:
½
kg. hamburger meat, one egg, one chopped onion, one teaspoon of chopped garlic,
2 slices of bread (soaked, drained and crumbled), salt and pepper to the taste,
4 teaspoons of Maca flour,
3 tablespoons of flour.
Mix
well the ingredients, form small balls, flatten them, put on some flour and fry
them with a regular amount of oil.
For
8 portions:
1
can of evaporated milk, 1 apple cut in four, 1 egg, 2 teaspoons of sugar, 2
teaspoons of melted butter, ¾ cup of sifted flour, 1 teaspoon of baking powder,
cinnamon powder to the taste, and 6 teaspoons of Maca
powder.
Liquefy
the milk, apple, egg, sugar, butter and cinnamon until the apple is totally
chunked. Add the flour and the baking powder until it is well mixed. Fry each
portion in hot oil, until it is brown in both sides. Serve with butterscotch or
jam.
For
4 portions:
250g.
lentils, 1 teaspoon of chopped chili, 100g. of pork meat in pieces, ½ chopped
small onion, 4 garlic cloves (peeled and chopped), salt to the taste, oil, 3
teaspoons of Maca powder.
Cook the lentils, in a pan fry the chopped meat, take it out and in the same pan
fry the onion, garlic, chili, add the lentils and cook for 20 more minutes,
before taking it off the fire, add the Best Maca’s powder dissolved in a small
amount of water.
